How to make Creamy Chipotle Chicken Breast
JUMP TO FULL INSTRUCTIONS
I'm happy to find my favorite brand of LA MORENA® Pickled Jalapeños peppers and LA MORENA® Chipotle Peppers at my local Fiesta Supermarket.
NOTES:
- You can use another cut of chicken; the cooking time may vary depending on the cut.
- The addition of the 2 peppers will be a little too spicy for some, but the cream and milk sauce will make it very tolerable.
- This sauce can also be used for shrimp, just cook the creamy chipotle sauce first and then add the shrimp to cook for 5-6 minutes in the end.
DIRECTIONS:
- Season the chicken breasts with garlic powder, salt, and pepper.(Please check the ingredients list below)
- Heat oil in a large skillet.
- Add the chicken breasts and cook for 3 minutes per side, turning once.
- While the chicken is cooking, add the heavy cream, milk, the 2 LA MORENA® Chipotles in Adobo peppers, and powdered chicken bouillon into your blender. Process for a couple of minutes until it has a fine texture.
- Turn the heat to medium and pour the creamy chipotle mixture into slowly cook. Make sure to watch the heat, as the sauce has to be gently simmering, NOT boiling. Too much heat will affect the cream and it will curdle. Cook for 4 minutes and then add the chicken breasts.
- Cook for 4 more minutes.
Serve immediately with rice or vegetables and garnish with parsley. Thank you for trying this recipe, it is always fun to rediscover new options of using the ingredients we love like.

- 1 teaspoon ground garlic powder
- Salt and pepper to taste
- 2 tablespoons of vegetable oil
- 1 cup of heavy cream
- 1 cup of milk whole
- 2 Chipotle peppers in Adobo from LA MORENA® Brand

I’m happy to find my favorite brand of LA MORENA® Pickled Jalapeños peppers and LA MORENA® Chipotle Peppers at my local Fiesta Supermarket.
Instructions
Season the chicken breasts with garlic powder, salt, and pepper.
Heat oil in a large skillet to medium high.
Once the oil is hot, add the chicken breasts and cook for 3 minutes per side, turning once. They have to look lightly golden. Remove the chicken and place on a plate.
While the chicken is cooking, add the heavy cream, milk, LA MORENA®Chipotles in Adobo, and powdered chicken bouillon into your blender. Process for a couple of minutes until it has a fine texture.
Using a paper towel, clean up any excess oil from the skillet where you cooked the chicken. Turn the heat to medium and pour the creamy chipotle mixture in to slowly cook. Make sure to watch the heat, as the sauce has to be gently simmering, NOT boiling. Too much heat will affect the cream and it will curdle. Cook for 4 minutes and then add the chicken breasts.
Cook for 4 more minutes, turning the chicken breasts if needed to have an even cooking.
Serve immediately with rice or vegetables and garnish with parsley.

My husband and I LOVED this recipe. How can thicken it up a bit without changing the flavor. It was a little runny to use for pasta sauceReply
Mely Martínez
Hello Ashley,
You can increase the amount of cream and chipotle pepper.Reply
brian

What can I substitute milk with? Sensitivity to cow milk!
Reply
Mely Martínez
Hello Drex,
You can use a vegan option, like almond milk or soy milk.Reply
Genevieve
I made this pretty much as written (my bf loves spicy so I added 5 cups of milk/ heavy cream mix to 6 peppers). I also added some cornstarch to thicken it some. Omg…He said this was one of the BEST things I’ve ever made for him and he has been scarfing it down. I asked him what can I make for him next, and he said “you can make that chipotle chicken again, and again, and again. I LOVE it.” Lol! Thank you so much for amazing recipe.Reply

Great recipe! The only thing I would change is adding corn starch or flour to thicken the sauce a little. Otherwise I’ll definitely make it again.Reply
Mely Martínez
Hello Tim,
If you let the sauce reduce a little, you won't need to add flour or corn starch. Thank you for trying the recipe! Happy cooking!Reply
Ivy
Is the whole milk totally necessary?
Reply
Mely Martínez
Hello Ivy, you can use another type of milk. The texture and flavor will change.

I just made this for the first time, and only used whole milk with half a can of the chipotle peppers. I added peas to my sauce and it is so beautiful and delicious!Reply

I made this last night and it was very well received, I had been trying to find a recipe similar to a favorite dish (Pollo Chipotle) served by a restaurant we lived by a few years ago and this was it. I made the recipe as written but served it over rice topped with sauteed mushrooms, bell peppers and jalapeno with some refried beans on the side. I can't wait to try your other recipes, thank you!Reply

Mely, I saw the picture of you at Walmart. Needless to say, it made me truly happy to see you partner with Walmart because to the Hispanic culture, you're a national treasure. It was about time a corporation like Walmart brought you aboard. I'm so incredibly-proud of you. God bless you, always. Here's looking at you, Kid!

I must give this a shot tomorrow. I used chipotle for years but they've become difficult to find except at a restaurant supply store, much too large of a can.

A while back we had tried creamy chipotle chicken at a friends house and ever since then I wanted to make it but didn't know how. Thanks to Mely we were able to enjoy a dish.. or two at the comfort of our home! I added a few more chipotle peppers, had our chicken grilled instead and it was delicious!Reply
Marcie
Mely, I tried this recipe and the whole family loved it! I have to confess that I didn't read the ingredients carefully and I bought two cans of chipotle chiles but when I blended one can I realized that the color did not match your recipe, so I ended up only using half of the sauce mixture, then added more milk. It was super delicious and not too spicy (at least for us). I ended up freezing the extra oops sauce and can't wait to use it with shrimp.Reply
mmartinez
Hello Marcie,
You can use that leftover sauce to make the Shrimp version of this recipe or to add it to a creamy pasta dish.
Provecho!Reply

My sauce was very nice and creamy right after I was done with the blender, but I left it in there a bit and when I went to pour it in the skillet, it was liquidy and a bit curdled. Is that how it is supposed to be?
Reply
Mely Martínez
Hello Diana,
Any sauce that includes cream will be curdled if you cook it too high or let to boil. You need to cook it at a very low heat.

This was delicious. I used chicken tenders and sprinkled on just a little cumin like a previous commenter suggested. When I removed the chicken after sautéing I added half of a yellow onion before adding the sauce to the skillet, didn’t bother wiping out the skillet (missed that part in the directions). Sprinkled chopped cilantro on top just before serving. Perfect amount of heat, served with fideos. Yummy!Reply
mmartinez
Hello Karen,
Thanks for trying the recipe, and for sharing the way to make it your own.
